Traditional, pale yellow, smooth, elastic, stretched
curd cheese made with cow’s milk. Supple and smooth
with a thin, hard, golden-yellow waxed rind. It is mild
when very young becoming strongly tangy and piquant
with age; mild to sharp with a light, smoky flavour.
Its uses include: table cheese, grilling, and melting. It can be found used in appetizers, sandwiches, cooked foods and desserts.
Try pairing Provolone with red grapes, pears, pineapple, figs, olives, tomatoes, roasted red peppers or hearty bread.
Try Provolone with Merlot, light-bodied Pinot Noir, Syrah, Cabernet Sauvignon, Cabernet Franc, non- or lightly-oaked Chardonnay, dry vidal, Pinot Blanc wines, ale or tomato juice.
