A traditional, firm, smooth, light yellow cheese with
small holes made with cow’s milk. It can range from
mild, slightly tangy and nutty to sharp and pungent
flavour. Mature cheese are hard and slightly granular
with a black wax coating that is a stark contract to
the deep yellow interior.
Gouda uses include table cheese, snacks, breakfast, grating, grilling. It melts well when shredded and browns at high temperatures. Gouda is excellent by itself, with fruit or raw vegetables, in sandwiches, in stuffed pancakes or in au gratin soup. It is used in appetizers, salads, in cooked foods and desserts.
Try pairing aged Gouda with red apples, pears, toasted almonds, dark or crusty breads, and smoked Gouda paired with apples, pears and thinly sliced Prosciutto.
Try Merlot, Cabernet Sauvignon, Cabernet Franc, Baco Noir, Chardonnay, Pinot Blanc wines, beer, cider, sparkling red grape juice or coffee with aged Gouda.
Try red wine, beer, sparkling cider, or tomato/vegetable juices with smoked Gouda.
