Friulano is a small, wheel-shaped, rindless cheese with
a natural yellow to gold rind with rare irregular openings.
Inside, it is pale to gold-yellow in colour with a firm
but supple and flexible texture. It has a mild, delicate,
milky flavour that becomes more salty, tangy and nutty
with age.
The hard aged versions are superb for grating. It melts and browns at high temperatures.
When young, Friulano is excellent as a snack or sandwich cheese. With time, it acquires incomparable and complex flavours. Grated and mixed with Ricotta, it’s just sublime in cannelloni. At a wine and cheese tasting, all its qualities will be better appreciated if you serve a young, a medium and a sharp Friulano with fresh fruit, nuts and a good red wine.
It’s also surprising with a fragrant and cool white wine.
