Traditional semi-soft cheese made with cow’s milk. The
rind is thin, uneven, light brown to terracotta coloured
and slightly oiled, while the paste with its small,
round holes is rather soft and elastic and varies in
colour from whitish-yellow to yellow. The cheese has
a pleasant aroma with distinctive, sweet taste.
Its body is yellow in colour, soft and elastic in texture
and may have small round “eyes” throughout. It has a
mellow, milky flavour and as it ages, the flavour becomes
more pronounced an even nutty. When melted the flavour
is earthy with a suggestions of mushrooms and a fresh
acidity.
Fontina is best as a table cheese, for snacking or melting and grilling in cooking. It can be spread on crackers or cut into cubes and slices for eating out of hand. Fontina is an appealing snack and sandwich cheese.
