Crotonese is a small, yellow, table cheese made with
a mixture of sheep and goats milk, which originates
from Sardinia, an island off the coast of Italy, and
is know as “Baby” Romano. Crotenese is compact and firm,
to very hard, depending on age. It has a course granular
texture with a rich, distinct flavour that is sharp
and piquant. It has a stronger, sharper flavour than
Ricotta and its surface is a bit oily due to the natural
oils in the milk. Formed in woven molds, the rind takes
on a ribbed pattern that makes a nice presentation.
It is a creative alternative to other grating cheeses and is a great snacking cheese. Serve it grated or sliced thinly drizzled with olive oil.
