Cheddar is a firm, smooth to somewhat grainy firm cheese
made from cow’s milk that is orange to white in colour.
Mild and slightly acidic, like buttermilk, mild, medium,
or strong in flavour depending upon age. Medium cheddar
has a light nutty flavour.
Young cheddar melts easily and old cheddar is good for
grating. Mild cheddar melts best when shredded and placed
under direct heat. Sharp cheddar melts best when shredded
and incorporated into a sauce. It can be cubed, grated
or sliced for use in sandwiches and snacking.
Cheddar is used in appetizers, sandwiches, salads, in cooked foods and desserts. Try pairing with cherries, grapes, pears, apple wedges, cashews, pumpernickel and rye breads and crackers.
Try cheddar with Gewürztraminer. Riesling, Syrah, Cabernet Sauvignon, Cabernet France, Bordeaux, Merlot, Pinot Noir, Chardonnay or Zinfandel wines, dessert wines like Ports and Sherries, light beer, ale, Champagne, or apple cider.
Available in whole, wedge, sliced or shredded form. Available in marble, white, light, mild, medium, and old flavours.
