Asiago is a traditional, light yellow cheese made from
cow’s milk with a compact granular interior with many
tiny holes inside and a natural rind that is smooth and
glossy. It has a springy, firm to hard texture depending
of length of curing. It has a very mild, delicate, sweet,
undemanding flavour and fragrance when young. As it ages
it has a full, sharp and piquant taste with detectible
saltiness.
Cooks well when shredded or grated. Best for grating,
shredding or snacking. It works well for a mild table
snack or melting cheese or for use in sandwiches. Can
be grated into very fine pieces for use as a topping and
in cooking.
Asiago can be used as a table cheese, for grating, or
as a condiment. It can also be grated and put pastas,
soups, salads, and sauces. Perfect for burgers and sandwiches.
Try pairing it with pears, red or green grapes, figs,
crusty breads, or salami.
Try Asiago with Cabernet Sauvignon, Sauvignon Blanc, Rioja,
Merlot, Port, Syrah, Cider, sherry, Cranberry Juice, sparkling
red grape juice.
Available in whole, wedge, grated, or shredded form.
