Bocconcini is a small egg-shaped cheese of stretched
curd that is stored in lightly salted water. It has
an elastic texture and consistency with a delicate,
fresh, milky taste with a delicate milk and cream aroma. It melts and stretches in long strands while keeping its shape.
It is used fresh or sautéed with vegetables, especially tomatoes, bell peppers and eggplant. It tastes wonderful in fresh tomato salads with basil and
oil and is delicious on pizza, or in pastas and salads. Bocconcini also makes an excellent snack and a refreshing breakfast companion.
Try Bocconcini with Chardonnay, Sauvignon Blanc, or light-bodied Pinot Noir wines.
